Persian Mountains Honey
• Key zones for production: Alborz and Zagros mountainous areas and mountainous heights

• Most Produced honey in Iran
Unlike mono-floral honey, there is no predominance of the nectar of a single plant in honey produced in the mountain. Besides, honey bees collect nectar from different medicinal herbs. Mountain honey is known to bear the largest share of Iranian honey production. This type of honey is mostly produced in Iran’s mountain highland. However, such mountainous areas as western Alborz and northern Zagros in the provinces of Ardabil, east and west Azerbaijan, Kurdistan and Lorestan, due to the diversity of plants with nectar and lack of one special plant nectar dominance, this type of honey is produced in higher quantities which are considered among the highest quality types of honey in Iran. Moreover, it includes the dominant share of honey production in mountainous areas of other provinces. This type of honey, which is supplied to people as fall honey has been produced by the nectar of mountain medicinal plants. Persian Mountains Honey is of high quality— considering the production process in Pristine pastures and the high diversity of its nectar plants. Besides, it can be regarded as healthy and even organic.

Plant Introduction and Properties: According to the latest scientific research, more than 900 different species of Milkvetch grow in Iran, as a result of which botanical researchers has called Iran the Paradise of Milkvetch. Milkvetch Manna—of all 900 different species—has the highest density in Iran. It is a perennial plant that is 150 centimeters high. It has thorns and fragrant white flowers competent to produce in nectar where consequently attracts bees. The activity of bees on various flowers makes one of the most delicious kinds of honey both in local- and worldwide scales. Gavan Gaz Honey —one of the most extraordinary kinds of honey—can be harvested from the mountainous regions of Central and Northern Zagros—mountainous zones of these meadows are covered with this valuable perennial species which includes a large proportion of the honey production in this region. Gavan Gaz Honey tastes desirable, and the color is light yellow to golden yellow. The alleged honey bears a number of such benefits as being calming, laxative, and useful for the digestive system. PERSIAN SIDR HONEY

Plant Introduction and Properties: Jujube tree—which can be up to 6 meters tall—or sometimes found as a shrub, is evergreen. This tree is considered highly valuable—located on the southern and tropical regions of south and southwest in Iran. The alleged honey—collected by bees being fed by the Jujube tree– is known as Persian Sidr honey. Considering the fact that this type of wild jungles (in which this plant is broadly distributed) is the most likely to grow in the south of the country. This is while no other nectars in the meadows can be found during the season of blossoming. It—all by itself—enables individuals to produce Persian Sidr honey where it is recognized—based on medical benefits and availability of essential nutrients—as one of the top sorts of honey of high quality in the world. It is also known in worldwide markets as the Middle East Manuka honey. Desirable taste, subtle aroma, and late crystallization are the customer-friendly features of such a product. Besides, it is high in fructose, rich in minerals and essential amino acids, and low in glycemic index. Important substances of the jujube plant are tannins and plant sterols such as beta-sitosterol, Betasystole glucoside as well as Saponin Ebelin Lactone, which gives rise to foaming of honey. Saponins are precursors of steroid hormones. This step of extraction, which leads to foaming of the honey, where it is considered as one of its properties, is due to the presence of a sort of Saponin, known as Ebelin Lactone. After the breakdown of foam, it will be formed again if stirred and heated. A major contribution to the nutritional value seems to be connected to the presence of glycoside and Saponins. Citrus Honey

• Crystallization: Crystalize in six months to one year approximately
Medical properties: The Nectar produced from citruses by bees is known as citrus honey or Orange Blossom Honey with a bright color fragrant smell. Beekeepers put their hives and colonies in citrus orchards in north and south of the country. As a result, citrus honey is collected in early spring by bees. Unlike citrus honey, southern citrus honey has less moisture but more aroma. It is also rich in vitamins, especially B2, B5, B3, and vitamin C. However, it is low in phenolic compounds and antioxidant agents. Methyl anthranilate and Hesperidin substances have been identified as two indicators of Citrus mono flower honey. Moreover, honey with a high predominance of citrus fruits is significantly high in caffeine. Citrus honey—through adjusting blood pressure and increasing levels of Melatonin, is known as calming and invigorating where is also effective in providing tranquility and tranquility of sleep.

Plant Introduction and Properties:
Coriander is one of the crops widely grown in Iran for consumption. However, the plant will reach the flowering stage and it will be valuable for bees only if it is grown for seed harvesting. Coriander flowers are very attractive to bees and not only boost bee reproduction, they also provide a tasty and high-quality honey with beneficial properties. In addition to the general benefits of honey, Coriander honey has unique properties resulting from its active ingredients such as linalool, α-pinene, limonene, and rutin. The most important properties of Coriander honey are providing anti-spasm (muscle cramps) anti-bloating, and anti-diarrhea effects, strengthening the digestive system, improving bile flow, healing mouth ulcers, and increasing lactation, memory, and sexual power. The Multi-floral honey is harvested from various kinds of plants where this term is chosen due to the fact that bees collect this nectar from diverse flowers. In spring, it is not practically possible to determine types of honey. For one thing, it is the variety of available flowers and for another, the multiplicity of valuable plants. This would be the reason why such honey is called “Multi-floral”.

Medical properties: Eryngo honey—processed from the nectar of diverse species of Eryngo (more than 11 species of Eryngo are grown in Iran’s mountainous areas and plains, and most of these species are highly attractive to bees for their nectar). Namely, Eryngium from the Umbellifers. This plant is found mostly found in the mountainous regions to the west, and the vegetative zones of the Zagros, wherein such areas the honey with a predominance of Eryngo can be harvested. Eryngo honey is one of the tastiest and colorful kinds of honey produced in the heights of the mountainous regions of Iran. Not to mention that high quality, It is high in phenolic and flavonoid compounds that bear such therapeutic effects as being diuretic, alleviating, sexual enhancive, sedative, beneficial to diabetic and liver diseases. Similar to many other types of honey, which are harvested from mountainous regions of Iran, Eryngo honey is valuable due to the lack of such chemicals as pesticides and fertilizers.

Propolis-based honey is a natural antibiotic which contains organic multi-floral honey with a smart mixture of propolis extract.
